Not any one fic, and not drastically. However, my interpretation of a character is often influenced by what I read as much as it is by canon, and my own biases and world-view. Which means that fic can change my opinion and interpretation of some aspects of a character, but I haven't actually had any fic change my entire opinion of a character.
Fic in general has, however, changed how much I write a character, or a pairing, because I like variety, and when a lot of it starts focusing on one character or pairing, I'll avoid that character or pairing (or interpretation of a character or pairing) like the plague.
