Today is about noms. Today is salmon and homemade peach sauce. With ginger and salt, and some heavy cream.

Peach sauce:

10-12 fresh peaches, sliced
1 cup sugar
2 teaspoons ground cardamom
lemon juice to taste


Baked Ginger-Peach Salmon with Cream

slab of salmon
powdered ginger
peach sauce
heavy cream
salt
olive oil

(Did I measure any of this? Nooooo.)

Take your slab of salmon, and make sure you have a pan large enough for it. Coat the bottom of the pan with olive oil (I prefer extra light, but regular will do.)

If your slab of salmon has skin, make sure it is scaled. Scales are not tasty.

Skin side down if it has skin.

Sprinkle the top generously with ginger. Coat completely with peach sauce.

Bake for 20-30 min, depending on your oven and the size of your salmon (I have a toaster oven, it is small, and a small piece of salmon. It was 25 minutes from a cold toaster oven to nommy fish)

Remove from pan, including all the nommy carmelized bits, to a sufficiently sized serving bowl or plate. Add heavy cream and salt to taste, and nom!
