1. He was born long before modern morality was developed, and while he adapts to the times in which he lives, his underlying morality is not the same. Not good, not evil, just different.

2. He's a survivor.

3. He's the world's oldest wiseass, even when he provides words of wisdom.

4. He doesn't apologize, he doesn't make excuses, and he doesn't need to be redeemed.

5. His current persona(s) is/are not him. He wears his mortal lives like a mask that runs very deeply, but they're still a mask in the end. He's very aware of the difference between the mask and himself - and sometimes that mask changes depending on who he's dealing with. Even the persona of Death is nothing more than a mask he can draw on when he needs to.
